Pass by Maginhawa Street in Quezon City, and it’s impossible to miss the long line that’s usually outside Mugen Ramenya. It’s because in this small ten-seat ramen restaurant, Chef Jorge Mendez—known for his celebrated concepts Modan and Some Thai—brings his straightforward approach to ramen from his limited kitchen area to diners’ bowls and plates.

The restaurant’s name, “Mugen,” means “infinity” in Japanese, which aptly describes how each bowl showcases the boundless characteristics of Hakata-style tonkotsu ramen that the restaurant specializes in. 

Although the menu offers a lean selection, it’s more than enough to satisfy cravings. A few appetizers, such as Gyoza and Karaage, as well as Wagyu, Chashu, or Crab Chahan Fried Rice, all complement the mains of Hakata, Tantanmen, Wagyu and Tendon, and Crab Ramen. The Wagyu Ramen is a must-try, made with A5 wagyu slices, a soft yolk, and a rich broth. Meanwhile, the Crab Ramen combines laksa-like spices with the sweetness of crab.

Mugen Ramenya keeps its concept simple: small space, big flavors. Their cozy space, precise techniques, and playful perspective invite diners to slow down and slurp up the unique flavors in every bowl.
