Minami Saki By Astoria-Style Omakase and Tea Ceremony: An authentic Japanese experience

Omakase for their 11th year

The word “omakase” literally translates to “I leave it up to you,” and is commonly used to ask a Japanese chef to curate a meal for their dining experience.

In celebration of Minami Saki By Astoria’s 11th anniversary, Chef Chikako Kataoka chooses the full-course meal for the guests. She has chosen truly authentic Japanese dishes, which will take you on a gastronomic journey.

Each item is designed to make the event a truly memorable experience. Among her creations are the following:

Temari Sushi - Assorted bite-sized sushi balls (salmon, tuna, and lapu-lapu)

Shiromi Sashimi with Ume Jure - Thinly-sliced, sashimi-grade white fish with ube plum jelly

Negi Shio Yakko - Cold silken tofu topped with spring onion and sesame oil

Signature Yaki Gyoza - Pan-fried dumpling filled with minced pork and assorted vegetables, served with gyoza sauce

Wata Ame Gyu Nabe - Cotton candy and wagyu beef simmered in a paper hotpot, with assorted vegetables

Gindara Foil Yaki - Foil-baked black cod with unsalted dashi butter

Marinated Wagyu Steak - Beef wagyu ribeye seasoned with condiments

Kaisen Kaminabe - Assorted seafood and vegetables simmered in a paper hotpot

Ube Strawberry Daifuku - Sweet mochi filled with fresh strawberry and ube paste

Minami Saki Jelly - Layers of jelly made with ube and a hint of yuzu, garnished with mint

Special tea ceremony for guests

A Japanese tea ceremony is an honored Japanese tradition. It is a host’s ceremonial way of preparing green tea for the guests, and is usually done in a traditional tearoom with a tatami floor. It is usually a multi-hour event that showcases artistry and the proper form of tea preparation.

The traditional tea ceremony usually takes at least one to two hours. The reason behind the normally lengthy event is due to its starting time— from the time the guests arrive and enter a small door into the chashitsu (tearoom) until the conclusion, when the participants enjoy the tea.

Though not everyone can be invited to this special occasion. One must be knowledgeable about the nature of the ceremony, the displayed kakejiku (Japanese art scroll), the making of the chawan (ceremonial tea bowl), the flower displays, and the tea itself.
